The Scoop

Okayama Kobo is a Japanese bakery and cafe built around bread handmade with 100 percent Hokkaido flour and additive- and preservative-free dough. The owner recommends eating it the day it is bought. Tsunetaka Kawakami founded the business after learning in small bakeries, then opened Okayama Kobo Liaison and Kunitomi before establishing a consulting practice that helped open more than 200 bakeries across Japan. The current California menu carries four matcha drinks and two shared matcha pastries. Anaheim adds Matcha Castella; Laguna Niguel adds Matcha Red Bean Cube and Matcha Kinako Mochi. The owner site lists four US locations: Anaheim, DTLA, Honolulu, and Laguna Niguel. The three California branches are included here.
