Junbi sells matcha as fuel, and says so plainly: clean natural energy without the jitters or the crash, caffeine for energy and L-theanine for focus. The sourcing is the part that matters. Junbi buys directly from a hundred-year-old tea farm in Uji, and the founders go out and oversee each step themselves, which is about as short a chain as a cafe can run. It started in 2017 as Sip Matcha, founded by two couples, June Quan and Dan Tran alongside Anna Wang and Jeremy Tu. The name changed to Junbi in January 2020 to secure a trademark and open the way to franchising, and junbi means preparation in Japanese. The ceremonial matcha with yuzu juice and real dragon fruit is the drink that made the name, and the retail side now carries close to a thousand reviews of its own.
